Vegetable Pot Pie

Vegetable Pot Pie is a delicious comfort food. I made this on a cold and rainy day and it truly hit the spot! I took it for my meal to a dinner that was not serving vegan food. One person wanted to taste it and came back for more. I also took the rest to a family gathering. And a few family members who are meat eaters tried it. The consensus was that it had a good flavor.

Combine ingredients and knead dough. Rub dough with about ⅛ t of olive oil to make it more pliable if needed. Once dough forms into a ball separate into 2 halves. Roll out the first half and place in a greased oblong dish. Poke holes in the bottom of the crust with a fork and place in a 350 degree oven for 7 minutes. While that is baking, roll out the 2nd half of the dough to fit over the top of the pie. Set aside.



Rinse and drain Jackfruit. Squeeze as much liquid out of it as possible in a paper towel and shred. Saute in a skillet with olive oil. Jackfruit soaks up the oil pretty quickly but it's ok that the skillet gets a bit dry. Cook until it gets charred and has a dry texture. Set aside.



Add frozen vegetables to a skillet on medium heat with olive oil. Cook for a few minutes until slightly tender. Then add sliced mushrooms and onions. Season with pink salt, garlic powder, sage, onion powder, thyme, black pepper, dry basil, smoked paprika and Montreal seasoning. (I used this combination of seasonings in my Un Turkey Roast I made for Thanksgiving. I put in a bottle and called it my Thanksgiving Seasoning. I combined 1 teaspoon of each) Start by adding ⅛ t of each seasoning and increase according to your preference.


Add vegetable broth, once it starts to boil add corn starch, flour and gravy master seasoning (optional). Simmer until thick and creamy. Stir in Jackfruit.





Add mixture to the prepared pie crust. Then top with the other half of the pie crust. Poke small holes in the top of the crust with a fork.



Bake in a 350 degree oven for 35 minutes. I am not a professional so my pie crust is not very beautiful, but it tasted good!

3 C Flour

½ t Salt

½ t Sugar

1 C Vegetable Shortening

Vegetable Pot Pie Ingredients and Method

1 Can Young Jackfruit

⅛ t Soy Sauce

1 Bag of frozen mixed vegetables (Corn, Greenbeans, Peas and Carrots)

½ C Sweet Onions Chopped Coarsely

8 oz Sliced Portobello Mushrooms Cleaned

2 C Veggie Broth

1 T Cornstarch

1 ½ T Flour

½ t Gravy Master (Optional)

" My Thanksgiving Seasoning" to make a batch, combine 1 t of each of the following:

  • Garlic Powder

  • Pink Salt

  • Onion Powder

  • Thyme

  • Black Pepper

  • Dry Basil

  • Smoked Paprika

  • Montreal Chicken Seasoning


Method:
