Vegan Pepper Steak

It's hard to believe that once upon a time I did not like eating green peppers. Now I find them delicious and a wonderful addition to a few of my favorite meals. Today, I decided to try and recreate a favorite meal that I would eat from time to time as a meat eater. And with a couple of simple adjustments I created a Vegan Pepper Steak that wasn't lacking in flavor.



Here is a list of the ingredients I used. I did not measure seasonings. Please add the following to your taste:


2 Green Bell Peppers, washed and sliced thin

1 Sweet Onion cut into big slices (I had a small piece already cut off of mine, but it was a big onion)

1 pkg of steak cut mushrooms


Seasonings:

Pink Salt

Garlic Powder

Onion Powder

Black Pepper

Soy Sauce

Apple Cider Vinegar

Steak Seasoning (check label to make sure it is vegan)

1 Vegetable bouillon cube


Other Ingredients Used:

Olive Oil

1 T Flour

Liquid Smoke


Method:

Slice and wash onions and peppers. Set aside.


Rinse off mushrooms, then coat with olive oil and add a few drops of liquid smoke and sprinkle on some of the steak seasoning.


Add mushrooms to skillet in a single layer. Then top with the onions and peppers. Add salt, garlic powder, onion powder, black pepper, soy sauce and more steak seasoning.


Cover with lid and allow to cook until a juice forms. Remove the lid. Add bouillon cube and a few drops of the apple cider vinegar. You can leave this out if you prefer and add more soy sauce. I actually used the vinegar because I ran out of soy sauce. However, I found that it gave it a great balance in flavor and may continue to use it next time.


Mix all ingredients and continue cooking until vegetables are tender. Add and adjust seasonings as needed according to your taste. Sprinkle on the flour and stir in until all vegetables are coated. Cook a few minutes longer until the sauce thickens to the consistency of a thin gravy. Serve over rice. I used brown. Enjoy!
