Simple & Delicious Spaghetti Salad

In the summer months having something simple, cool and delicious for dinner is the perfect combination. This yummy spaghetti salad will have your non vegan friends asking you to pitch in with a dish at the next pot luck. While traditional spaghetti salad usually calls for pepperoni or some form of meat, I decided to adjust the recipe but still include all the flavor.

We start with a blank canvas of angel hair pasta. This is usually my preferred pasta for most dishes. I like the light texture and versatility. Angel hair pasta can go well with simply adding a little olive oil, a few spices to season and some veggies. You really can't go wrong.

The bulk of the work for this meal is cutting and preparing the toppings. Once everything is prepped it comes together very quickly. And then with a few tosses you have a perfect side dish or a complete meal!

I was super proud of myself for actually measuring things out for you. I am working on this! With that being said, you can make this recipe your own and add more or less of the ingredients. I love the sweet cherry tomatoes and green olives so when having leftovers the next day, I went in with a few more. And speaking of leftovers, since this recipe calls for a fair amount of Extra Virgin Olive Oil it sets up a bit after being in the fridge overnight. To remedy this you can either take it out of the refrigerator and leave it sitting for about 30 minutes before serving. Or, pop it in the microwave for no more than 30 seconds. The idea is to soften the oil but keep the veggies on the cool side.

3-4 C Cooked Angel Hair Pasta

1 Chopped Cucumber

20 Cherry Tomatoes

1 C Sautéed Mushrooms (I seasoned these with a steak seasoning, smoked paprika and some garlic powder)

2.25 oz Can of Sliced Black Olives

½ C Green Olives

Vinaigrette Dressing:

1 tsp Minced Garlic

1 tbsp Italian Seasoning

¼ tsp White Pepper

1 C Extra Virgin Olive Oil

About 1 ⅓ C Apple Cider Vinegar ( to your taste)

1 tsp Onion Powder

1 tsp Garlic Powder

2 tsp Pink Salt

2 tbsp Lemon Pepper

1 tsp Agave


Add all ingredients and coat with Vinaigrette Dressing. Top with Vegan Parmesan Cheese
