I was one of those people who always thought I wouldn't like tofu but I have tried it a few times over the years. When I have tried it in the past I was not fully on a journey of a vegan lifestyle. In fact, I used to wonder whatever happened to just being vegetarian. It seemed the focus was all on going vegan. I have been skeptical of trying a tofu scramble. When I finally tried it I discovered it was actually good. The texture after its scrambled is very much like softly scrambled eggs. I am not usually a fan of softly scrambled eggs so I cooked my scramble a little longer to get most of the moisture out. You can cook it to the consistency and texture you prefer.
